Gevrey-Chambertin « La Justice »

The Vines

This climat has long been recognised for its typicity and the quality of the wines that emerge: Robert Parker called it one of the best of the whole commune of appellation village wines.

It is situated along the central axis of the Combe de Lavaux alluvial cone and has clay limestone soil.

Acquired in 2000, the vines on the plot are 40 to 50 years old. The surface area is 0.4085 hectare.

Vinification

Vinification is traditional: manual harvest; total destemming; cold maceration, then fermentation with indigenous yeasts; vatting for about 15 days; and maturation on the lees for 12 to 18 months in barrels, 30% of which are new wood from Allier.

Tasting

With a beautiful garnet colour, this wine is often consistent and mineral with a wonderful fine and supple fruitiness, yet it reveals good character; after 4 or 5 years, it really begins to show its qualities.

It can be served with poultry, roasts or soft cheeses.
